Main Ingredients
- 1 large eggplant sliced into rounds
- 1 large zucchini sliced into rounds
- 1 large yellow squash sliced into rounds
- 1 large red bell pepper sliced into rounds
- 1 large yellow bell pepper sliced into rounds
- 1 large onion sliced into rounds
- 4 cloves garlic minced
- 2 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a baking dish, arrange the sliced vegetables in an alternating pattern.
Drizzle with olive oil and sprinkle with minced garlic, thyme, basil, salt, and pepper.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
Serve hot as a main dish or side.
