Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Add the cold, cubed butter and mix until it resembles coarse crumbs.
  3. Add the egg yolk and cold water. Mix until the dough comes together.
  4. Press the dough into a tart pan. Bake for 15 minutes or until golden brown. Let it cool.
  5. In another bowl, whip the heavy cream, sugar, and vanilla extract until stiff peaks form.
  6. Spread the whipped cream mixture over the cooled crust. Top with fresh raspberries.
  7. Chill in the refrigerator for at least 1 hour before serving.
