Crust
- 1.5 cups Graham cracker crumbs
- ¼ cup Sugar
- ½ cup Butter, melted
Filling
- 16 oz Cream cheese, softened
- ½ cup Sugar
- 2 large Eggs
- 1 teaspoon Vanilla extract
- ¼ cup Raspberry preserves
Preheat oven to 325°F (163°C). Line a 9x9-inch baking pan with parchment paper.
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
Bake crust for 10 minutes. Remove from oven and let cool.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla extract, and mix until well combined.
Pour cream cheese mixture over the cooled crust. Drop raspberry preserves by teaspoonfuls over the filling. Use a knife to swirl the preserves through the filling.
Bake for 35-40 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
