Streusel Topping
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
Base and Filling
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup brown sugar, packed
- ½ cup unsalted butter, cold and cubed
- 1 cup raspberry jam
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.
In a mixing bowl, combine 1 cup of flour and ½ cup of sugar for the streusel topping. Add melted butter and mix until crumbly. Set aside.
In another bowl, combine 1 cup of flour, ¼ cup of granulated sugar, and ¼ cup of brown sugar for the base. Cut in cold butter until the mixture resembles coarse crumbs.
Press the base mixture into the prepared baking dish. Spread raspberry jam evenly over the base. Sprinkle the streusel topping over the jam.
Bake for 45 minutes or until the top is golden brown. Let cool before cutting into bars.
