Ingredients

  • 1 cup Raspberries
  • ½ cup Sugar
  • 4 Egg whites
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease the ramekins with butter and sprinkle with sugar.
  2. In a mixing bowl, mash the raspberries and mix with half of the sugar, cornstarch, lemon juice, and vanilla extract.
  3. In another bowl, whisk the egg whites until soft peaks form. Gradually add the remaining sugar and continue to whisk until stiff peaks form.
  4. Gently fold the raspberry mixture into the egg whites until well combined.
  5. Spoon the mixture into the prepared ramekins and smooth the tops with a spatula.
  6. Bake for 15 minutes or until the soufflés have risen and are golden brown on top. Serve immediately.
