- 1 cup unsalted butter softened
- 1 cup sugar
- 2 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup fresh raspberries chopped
- ½ cup pistachios chopped
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Mix in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture.
Gently fold in the chopped raspberries and pistachios.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 12-15 minutes, or until the edges are golden brown.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
