Crust
- 1 cup graham cracker crumbs
- ¼ cup melted butter
Filling
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- ¼ cup lemon juice
- 1 cup fresh raspberries
Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
Mix graham cracker crumbs and melted butter. Press into the bottom of the pan.
Beat cream cheese and sugar until smooth. Add eggs, vanilla, lemon zest, and lemon juice. Mix well.
Pour mixture over crust. Scatter raspberries on top.
Bake for 35-40 minutes or until set. Cool completely before cutting into bars.
