Ingredients

  • ½ cup Unsalted Butter melted
  • 4 oz Dark Chocolate chopped
  • 2 Large Eggs
  • 2 Egg Yolks
  • ¼ cup Granulated Sugar
  • ¼ cup All-Purpose Flour
  • ½ cup Raspberries fresh or frozen

Instructions 

  1. Preheat your oven to 425°F (220°C). Grease four ramekins and set aside.
  2. Melt the butter and dark chocolate together in a microwave or double boiler. Stir until smooth.
  3. In a mixing bowl, whisk together the eggs, egg yolks, and sugar until thick and pale.
  4. Fold the melted chocolate mixture into the egg mixture. Add the flour and mix until just combined.
  5. Divide the batter evenly among the ramekins. Press a few raspberries into the center of each.
  6. Bake for 12-15 minutes, until the edges are set but the center is still soft.
  7. Let the cakes cool for a minute, then run a knife around the edges and invert onto plates. Serve immediately.
