Tartlet Ingredients
- 1 cup all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup sugar
- 1 egg yolk
- 1 tablespoon cold water
Filling Ingredients
- 1 cup heavy cream
- 8 oz dark chocolate chopped
- 1 cup fresh raspberries
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar. Add cold butter and mix until it resembles coarse crumbs.
Add egg yolk and cold water. Mix until dough forms. Press dough into tartlet pans.
Bake for 15 minutes or until golden. Let cool.
Heat heavy cream until just boiling. Pour over chopped chocolate. Let sit for 5 minutes, then whisk until smooth.
Pour chocolate filling into cooled tartlet shells. Top with fresh raspberries. Chill until set.
