Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Filling

  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Topping

  • 1 cup fresh raspberries
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9x13 inch pan.
  3. Beat cream cheese and sugar until smooth. Add eggs and vanilla, mix well. Pour over crust.
  4. Bake for 30-35 minutes, until set. Cool completely.
  5. In a saucepan, combine raspberries, sugar, and lemon juice. Cook until raspberries break down and mixture thickens. Cool.
  6. Spread raspberry mixture over cooled cheesecake. Chill before serving.
