Raspberry Cheesecake Bars Recipe
Delicious raspberry cheesecake bars with a graham cracker crust.

Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Filling
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping
- 1 cup fresh raspberries
- ¼ cup sugar
- 1 tablespoon lemon juice
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into a 9x13 inch pan.
Beat cream cheese and sugar until smooth. Add eggs and vanilla, mix well. Pour over crust.
Bake for 30-35 minutes, until set. Cool completely.
In a saucepan, combine raspberries, sugar, and lemon juice. Cook until raspberries break down and mixture thickens. Cool.
Spread raspberry mixture over cooled cheesecake. Chill before serving.
