Ingredients

  • 1 rack lamb about 8 ribs
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon thyme chopped
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the rack of lamb with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the lamb for 2 minutes on each side.
  4. Mix garlic, rosemary, and thyme in a small bowl. Rub the mixture all over the lamb.
  5. Place the skillet in the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove from the oven and let it rest for 5 minutes before slicing.
