Ingredients

  • 1 cup Quinoa cooked
  • 1 large Sweet Potato peeled and grated
  • 1 cup Black Beans cooked and mashed
  • ½ cup Bread Crumbs
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Olive Oil for cooking

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked quinoa, grated sweet potato, mashed black beans, bread crumbs, cumin, paprika, salt, and pepper. Mix well.
  3. Form the mixture into patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side until golden brown.
  5. Transfer the patties to a baking sheet and bake in the preheated oven for 15-20 minutes.
  6. Serve warm with your favorite toppings and sides.
