Quinoa Salad Recipe
A healthy and refreshing quinoa salad perfect for any meal.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup fresh parsley chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
2. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
3. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
