Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  2. 2. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  3. 3. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
