Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup parsley chopped

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and diced carrot, cook for another 2-3 minutes.
  4. Add rinsed quinoa and vegetable broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Remove from heat and let it sit, covered, for 5 minutes.
  7. Fluff with a fork, season with salt and pepper, and stir in chopped parsley before serving.
