- 1 cup quinoa rinsed
- ½ cup almond butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
- ½ cup chopped nuts optional
- ¼ cup dried fruit optional
Preheat your oven to 350°F (175°C).
Spread the rinsed quinoa on a baking sheet and toast in the oven for about 10 minutes, stirring halfway through.
In a mixing bowl, combine the almond butter, honey, and vanilla extract. Stir until well mixed.
Add the toasted quinoa, chopped nuts, and dried fruit to the bowl. Mix until everything is evenly coated.
Press the mixture firmly into a lined baking dish. Use a spatula to smooth the top.
Bake for 10 minutes. Let it cool completely before cutting into bars.
