Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper chopped
  • ¼ cup cilantro chopped
  • ¼ cup lime juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine the cooked quinoa, black beans, corn, red bell pepper, and cilantro.
  5. 5. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
