Ingredients 

Main Ingredients

  • 4 Bell Peppers tops cut off and seeds removed
  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 cup Black Beans cooked and drained
  • 1 cup Corn cooked
  • 1 Tomato diced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • to taste Salt and Pepper
  • 1 cup Cheese shredded, optional

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Cook the quinoa in the vegetable broth according to package instructions.
  3. 3. In a mixing bowl, combine the cooked quinoa, black beans, corn, diced tomato, cumin, chili powder, salt, and pepper.
  4. 4. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  5. 5. If using, sprinkle the shredded cheese on top of each stuffed pepper.
  6. 6. Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the filling is heated through.
  7. 7. Serve hot and enjoy!
