Instructions
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds.
In a mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Top with shredded cheese if using.
Bake for 30 minutes until peppers are tender and cheese is melted.
