Ingredients 

Main Ingredients

  • 4 bell peppers any color
  • 1 cup quinoa cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cheese shredded, optional
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  5. Top with shredded cheese if using.
  6. Bake for 30 minutes until peppers are tender and cheese is melted.
