Ingredients

  • 3 ripe bananas mashed
  • cup melted butter
  • 1 egg beaten
  • 1 teaspoon baking soda
  • 1 pinch salt
  • ¾ cup sugar
  • 1 ½ cups all-purpose flour
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and mix well.
  4. Stir in the beaten egg, baking soda, salt, sugar, and vanilla extract.
  5. Gradually add the flour to the mixture and stir until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
