Main Ingredients
- 1 lb Chorizo casing removed
- 2 cups Shredded Oaxaca cheese
- 1 cup Shredded Monterey Jack cheese
- 1 Small onion diced
- 1 Poblano pepper diced
- 2 cloves Garlic minced
- 1 tablespoon Olive oil
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned, about 5-7 minutes. Remove the chorizo and set aside.
In the same skillet, add the onion, poblano pepper, and garlic. Cook until softened, about 5 minutes.
Return the chorizo to the skillet and mix with the vegetables. Spread the mixture evenly in the skillet.
Top with the shredded Oaxaca and Monterey Jack cheeses.
Transfer the skillet to the oven and bake until the cheese is melted and bubbly, about 10 minutes.
Serve hot with tortilla chips or warm tortillas.
