Pumpkin Streusel Bars Recipe

Crust and Streusel
- 1 cup all-purpose flour
- ½ cup brown sugar packed
- ½ cup unsalted butter melted
Pumpkin Filling
- 1 cup pumpkin puree
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 large egg
Preheat your oven to 350°F (175°C). Grease a baking dish.
In a mixing bowl, combine flour, brown sugar, and melted butter. Mix until crumbly. Press half of the mixture into the prepared baking dish to form the crust.
In another bowl, mix pumpkin puree, granulated sugar, cinnamon, ginger, cloves, and egg until smooth. Pour over the crust.
Sprinkle the remaining crumb mixture over the pumpkin layer.
Bake for 45 minutes or until the top is golden brown. Let it cool before cutting into bars.
