Whoopie Pies
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- ½ teaspoon salt
- 1 cup brown sugar
- ½ cup vegetable oil
- 1 cup pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
Filling
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup marshmallow creme
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
In another bowl, mix brown sugar and oil until combined. Add pumpkin puree, eggs, and vanilla extract. Mix well.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Drop spoonfuls of batter onto the prepared baking sheet. Bake for 10-12 minutes or until edges are set. Let cool completely.
For the filling, beat butter until creamy. Gradually add powdered sugar and vanilla extract. Fold in marshmallow creme until smooth.
Spread filling on the flat side of one cookie and top with another cookie. Repeat with remaining cookies.
