Ingredients

  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 cup brown sugar
  • ¼ cup water
  • ¼ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup chopped nuts (optional)

Instructions 

  1. 1. Line a baking sheet with parchment paper.
  2. 2. In a saucepan, melt the butter over medium heat.
  3. 3. Add the sugar, brown sugar, water, and pumpkin puree. Stir until the sugars dissolve.
  4. 4. Attach a candy thermometer to the saucepan. Cook the mixture until it reaches 300°F (150°C).
  5. 5. Remove from heat and stir in the pumpkin pie spice, vanilla extract, and salt.
  6. 6. Pour the mixture onto the prepared baking sheet and spread evenly. Sprinkle with chopped nuts if using.
  7. 7. Let the toffee cool completely before breaking it into pieces.
