Ingredients 

Cookie Dough

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Unsalted butter softened
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Pumpkin puree
  • 1 teaspoon Pumpkin pie spice

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the vanilla extract and pumpkin puree, and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll the dough into a log shape, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Slice the dough into ¼-inch thick rounds and place on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on a wire rack.
