  • 1 cup rolled oats
  • ½ cup pumpkin puree
  • ½ cup almond butter
  • ¼ cup honey
  • ¼ cup protein powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips optional

Instructions 

  1. In a large bowl, mix together oats, pumpkin puree, almond butter, honey, protein powder, pumpkin pie spice, and vanilla extract.
  2. Stir in mini chocolate chips if using.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Place the balls on a baking sheet and refrigerate for at least 30 minutes before serving.
