Ingredients

  • 1 cup oatmeal ground into flour
  • 1 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup pumpkin puree
  • 2 eggs beaten
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions 

  1. In a large mixing bowl, combine the oatmeal flour, all-purpose flour, baking powder, pumpkin pie spice, and salt.
  2. In another bowl, whisk together the milk, pumpkin puree, beaten eggs, maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a griddle or non-stick pan over medium heat and lightly grease it.
  5. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
