- 2 cups Rolled Oats
- 1 cup Pumpkin Puree
- ½ cup Maple Syrup
- 2 teaspoon Pumpkin Pie Spice
- 1 teaspoon Vanilla Extract
- ½ teaspoon Salt
- 1 cup Milk any kind
- 2 Eggs beaten
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the oats, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
Add the milk and beaten eggs to the mixture and stir until well combined.
Grease a muffin tin and divide the mixture evenly among the cups.
Bake for 25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
Let cool for a few minutes before removing from the tin. Enjoy warm or store in the fridge for up to a week.
