  • 1 cup Butter softened
  • 1 cup Brown Sugar packed
  • 0.5 cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 1 large Egg
  • 2 teaspoon Vanilla Extract
  • 1.5 cup All-Purpose Flour
  • 3 cup Old-Fashioned Oats
  • 1 teaspoon Baking Soda
  • 2 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 0.5 teaspoon Ground Ginger
  • 0.5 teaspoon Ground Cloves
  • 0.5 teaspoon Salt

Instructions 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Beat in the pumpkin, egg, and vanilla until well blended.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Gradually stir into the pumpkin mixture. Mix in the oats until just combined.
  4. Drop dough by rounded tablespoonfuls onto prepared baking sheets. Flatten slightly with the back of a spoon.
  5. Bake for 10-12 minutes, or until the edges are golden. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
