Ingredients 

Cookie Dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 1 cup white chocolate chips

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt. Set aside.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and pumpkin puree until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
