Crust
- 1.5 cups graham cracker crumbs
- 0.25 cup granulated sugar
- 0.5 cup unsalted butter, melted
Filling
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup pumpkin puree
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon ground nutmeg
Topping
- to taste Whipped cream
- to taste Ground cinnamon (for garnish)
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into a 9x13-inch baking dish.
Bake crust for 10 minutes. Let cool.
Beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla, and spices. Mix until combined.
Pour filling over crust. Bake for 35-40 minutes or until set.
Let cool completely, then refrigerate for at least 3 hours.
Cut into bars. Top with whipped cream and a sprinkle of cinnamon before serving.
