Ingredients

  • 3 cups Rolled oats
  • 1 cup Pumpkin puree
  • ½ cup Maple syrup
  • ¼ cup Coconut oil, melted
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Salt
  • ½ cup Chopped nuts (optional)

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. In a large mixing bowl, combine the oats, pumpkin puree, maple syrup, melted coconut oil, pumpkin pie spice, vanilla extract, and salt. Mix well.
  3. Spread the mixture evenly on a baking sheet lined with parchment paper.
  4. Bake for 30 minutes, stirring halfway through, until the granola is golden brown and crispy.
  5. Let the granola cool completely before storing it in an airtight container.
