Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • ½ cup honey
  • ½ cup almond butter
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup chopped nuts (optional)
  • ½ cup dried cranberries (optional)

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, pumpkin puree, honey, almond butter, pumpkin pie spice, vanilla extract, and salt. Mix well until all ingredients are evenly distributed.
  3. If using, fold in the chopped nuts and dried cranberries.
  4. Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.
  5. Bake for 25 minutes, or until the edges are golden brown.
  6. Allow the granola bars to cool completely in the baking dish before cutting them into bars.
