Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes, or until the edges are lightly browned. Let cool on a wire rack.
