Main Ingredients
- 2 cups Pumpkin puree
- 1 cup Chicken broth
- 1 cup Heavy cream
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- to taste Salt
- to taste Pepper
1. Heat olive oil in a pot over medium heat. Add chopped onion and garlic, cook until softened.
2. Add pumpkin puree and chicken broth. Stir to combine.
3. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Use a blender to puree the soup until smooth.
5. Return soup to the pot, stir in heavy cream, and season with salt and pepper to taste. Heat through.
6. Serve hot, garnished with a drizzle of cream or a sprinkle of fresh herbs if desired.
