Ingredients 

Dough

  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.25 cup ice water

Filling

  • 1 cup pumpkin puree
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves

Egg Wash

  • 1 egg, beaten

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Add ice water, a tablespoon at a time, until dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In another bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, and cloves.
  5. Roll out dough on a floured surface. Cut into circles using a cookie cutter.
  6. Place a spoonful of pumpkin mixture in the center of each circle. Fold and seal edges with a fork.
  7. Brush with beaten egg. Place on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown. Cool on a wire rack.
