Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and 1 cup sugar until smooth. Add pumpkin, eggs, vanilla, and spices. Beat until well combined.
  4. Pour the filling over the crust. Bake for 45 minutes or until the center is set. Let cool, then refrigerate for at least 3 hours before serving.
