Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • ½ cup vegetable oil
  • 4 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, sugar, and vegetable oil.
  3. Add eggs one at a time, beating well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Pour batter into a greased baking pan and spread evenly.
  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before cutting into bars.
