Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 2 large eggs
  • ¼ cup maple syrup
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ¼ cup chopped nuts optional

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mix together oats, pumpkin puree, eggs, maple syrup, milk, and vanilla extract.
  3. Add baking powder, baking soda, salt, and pumpkin pie spice. Stir until well combined.
  4. Fold in chopped nuts if using.
  5. Divide the mixture evenly among the muffin cups.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before removing from the tin.
