  • 1 lb pork tenderloin
  • 1 cup strawberries, hulled and sliced
  • 0.25 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Season pork tenderloin with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear pork on all sides until browned.
  4. Transfer pork to a baking dish and roast in the oven for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
  5. In the same skillet, add strawberries, balsamic vinegar, and honey. Cook until strawberries are soft and sauce thickens.
  6. Slice pork and serve with strawberry sauce.
