Instructions
Preheat oven to 375°F (190°C).
Season pork tenderloin with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear pork on all sides until browned.
Transfer pork to a baking dish and roast in the oven for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
In the same skillet, add strawberries, balsamic vinegar, and honey. Cook until strawberries are soft and sauce thickens.
Slice pork and serve with strawberry sauce.
