Crust
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter cold, cut into cubes
- ¼ cup ice water
Filling
- 4 plums sliced
- ¼ cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 tablespoon sugar for sprinkling
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine flour and cold butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
In another bowl, combine sliced plums, sugar, cornstarch, and lemon juice. Toss to coat.
Roll out the dough on a floured surface into a rough circle about 12 inches in diameter. Transfer to the prepared baking sheet.
Arrange the plum mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the plums, pleating as needed.
Sprinkle the edges with the remaining tablespoon of sugar.
Bake for 40 minutes, or until the crust is golden and the filling is bubbly. Let cool before serving.
