Plum Almond Tart Recipe

Crust
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter cold, cut into pieces
- 2 tablespoon sugar
- 1 pinch salt
- 3 tablespoon ice water
Filling
- 1 cup almond flour
- ½ cup sugar
- ¼ cup unsalted butter softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 6 plums halved and pitted
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water and mix until the dough comes together.
Press the dough into a tart pan. Bake for 15 minutes, then let it cool.
In another bowl, beat together almond flour, sugar, and softened butter. Add eggs and vanilla extract, mixing until smooth.
Spread the almond mixture over the cooled crust. Arrange plum halves on top, cut side up.
Bake for 30 minutes or until the filling is set and the plums are tender. Let it cool before serving.
