Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cut into cubes
  • 0.25 cup sugar
  • 1 pinch salt
  • 3 tablespoon ice water

Filling

  • 4 plums sliced
  • 0.25 cup sugar
  • 0.25 cup almond flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add ice water and mix until dough comes together.
  3. 3. Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet.
  4. 4. In another bowl, combine plums, sugar, almond flour, lemon juice, and vanilla extract. Arrange the plum mixture in the center of the dough, leaving a 2-inch border.
  5. 5. Fold the edges of the dough over the filling, pleating as necessary.
  6. 6. Bake for 40 minutes or until the crust is golden and the filling is bubbly. Let cool before serving.
