  • 1 cup shelled pistachios finely ground
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, combine the ground pistachios, flour, sugar, baking powder, and salt.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. Beat in the eggs one at a time, then add the milk and vanilla extract. Mix until smooth.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
