- 4 pork chops bone-in or boneless
- 1 cup pineapple juice
- ½ cup soy sauce low sodium
- ¼ cup brown sugar packed
- 2 cloves garlic minced
- 1 tablespoon ginger fresh, grated
- 1 tablespoon cornstarch optional, for thickening
In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger.
Place pork chops in a resealable bag or shallow dish. Pour marinade over the pork chops, ensuring they are well coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Preheat grill to medium-high heat. Remove pork chops from marinade and grill for 6-8 minutes per side, or until internal temperature reaches 145°F (63°C).
Optional: To thicken the remaining marinade, bring it to a boil in a small saucepan. Mix cornstarch with a little water to create a slurry, then add to the boiling marinade. Cook until thickened.
Brush grilled pork chops with thickened sauce before serving.
