Ingredients 

Cupcake Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 Eggs
  • 1 cup Crushed pineapple with juice
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and then add the crushed pineapple with juice, vegetable oil, and vanilla extract. Mix well.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill the cupcake liners about ⅔ full with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
