Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Melted butter

Filling

  • 1 cup Crushed pineapple, drained
  • 1 cup Coconut milk
  • 0.5 cup Sugar
  • 3 Eggs
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Press mixture into the bottom of a tart pan.
  3. Bake crust for 10 minutes, then let it cool.
  4. In another bowl, whisk together crushed pineapple, coconut milk, sugar, eggs, cornstarch, and vanilla extract.
  5. Pour filling into the cooled crust.
  6. Bake for 20 minutes or until the filling is set.
  7. Let the tart cool before serving.
