Main Ingredients
- 1.5 cups all-purpose flour
- 0.5 cup sugar
- 0.5 cup shredded coconut
- 0.5 cup crushed pineapple, drained
- 0.5 cup milk
- 0.25 cup vegetable oil
- 1 egg
- 2 teaspoon baking powder
- 0.5 teaspoon salt
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix flour, sugar, shredded coconut, baking powder, and salt.
In another bowl, beat the egg and then add milk, vegetable oil, and crushed pineapple.
Combine wet and dry ingredients until just mixed.
Spoon the batter into the muffin tin, filling each cup about ⅔ full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
