Ingredients

  • 3 cups sweetened shredded coconut
  • 1 cup crushed pineapple (drained)
  • ½ cup sugar
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 4 large egg whites
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, crushed pineapple, sugar, flour, and salt.
  3. In a separate bowl, whisk the egg whites and vanilla extract until frothy.
  4. Pour the egg white mixture into the coconut mixture and stir until well combined.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake for 20-25 minutes, or until the edges are golden brown.
  7. Allow the macaroons to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
