Ingredients 

Base

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter melted
  • 0.25 cup sugar

Filling

  • 1 cup crushed pineapple drained
  • 1 cup sweetened shredded coconut
  • 0.5 cup sugar
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine flour, melted butter, and ¼ cup sugar. Press mixture into the bottom of the prepared baking dish.
  3. Bake the base for 10 minutes, then remove from oven.
  4. In another bowl, mix together crushed pineapple, shredded coconut, ½ cup sugar, beaten eggs, and vanilla extract.
  5. Pour the pineapple mixture over the baked base and spread evenly.
  6. Bake for an additional 20 minutes, or until the top is golden brown.
  7. Let cool completely before cutting into bars.
