Ingredients 

Main Ingredients

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 large Eggs
  • 1 cup Crushed pineapple (with juice)
  • ½ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt.
  3. In another bowl, beat the eggs, then add crushed pineapple (with juice), vegetable oil, and vanilla extract. Mix well.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
